Franziska Birkenmaier studied nutritional science and food technology and wants to create all-natural flavor explosions in the kitchen with her salted lemon ferment. Franziska found the inspiration for her startup, zalzi, while experimenting in her own kitchen.
What's behind zalzi?
Franziska: My preserved lemons are made from 100% organic lemons, by hand, and with only three ingredients: lemons, water, and salt. This creates a completely new lemony taste experience. The lemons are no longer sour, but intensely salty and perfect for healthy everyday enjoyment.
What can zalzi be used for in the kitchen?
I also call "pureed zalzi" "sunshine in a spoon." The purée is incredibly versatile and can be used in dressings and sauces, as well as in smoothies or frostings. Whole zalzi are excellent as a topping, with pasta, in tagines, or salads. There are no limits to your personal creativity when using them. My tip: Start with a small amount, as preserved lemons are intensely flavored and salty.
How did the idea for your startup come about?
I've always experimented a lot in the kitchen. Through the knowledge I gained during my studies and my love of fermentation, I developed the desire to create a food product that is healthy, natural, and intensely flavorful. That was the foundation for zalzi – salted lemon ferment.
What role does HSWT play for your startup?
FSIWS , it has significantly simplified my entry into the food startup world. Here, I'm not only allowed to produce in compliance with food regulations, but more importantly, I receive a great deal of support, encouragement, and creative solutions through the network of other startups.
What tip would you like to share with other startups?
Quite simply: Theoretical concepts are important, but just doing it is the right thing to do.
