Claudia Flügel food technology at Weihenstephan-Triesdorf University of Applied Sciences (HSWT) and now works as a Food Innovation Consultant, supporting young food startups in successfully implementing their product ideas. In this interview, she talks about how she mentors founders, the role HSWT plays for her, and what advice she has for the next generation of entrepreneurs.

Claudia, what exactly do you do as a Food Innovation Consultant?

I advise young and innovative food startups on implementing their product ideas – from development to market launch. My services cover both product development and quality management. My goal is to help founders turn their vision into reality – even if they don't have the budget or expertise of large corporations. I find working with creative individuals who want to transform the food industry particularly exciting. One advantage: my consulting services are eligible for partial funding through the BAFA program.

What connection do you have to HSWT?

My connection to HSWT has always been important to me. I want to give something back for what I learned there. I am particularly passionate about showing students how closely theory and practice are intertwined in food technology. In my previous job, I regularly supervised interns and theses – something I would like to continue in the future.

Where does your company currently stand – and where do you want to go?

I'm currently building my company, acquiring my first customers, and expanding my network, including through trade fair attendance and networking with potential partners. My long-term goal is to build a team that shares my passion for food and innovation. Step by step – but with a clear vision.

What advice would you give to other startups?

Many startups begin with great ideas, but often with too many projects at once. My advice: Take the time to develop your concept in a structured way, and definitely write a business plan. This will help you determine if you're truly passionate about your idea – and you'll learn to realistically assess your project. The food industry is demanding and highly competitive, but with conviction, a clear concept, and good marketing, a lot is possible.
